1. In a medium bowl, whisk together the egg yolks, sugar, and salt. 2. In a medium saucepan, combine the pumpkin purée, cream, milk, pumpkin spice, and vanilla if using. Bring the mixture to a simmer. 3. Using a 1/4 cup, slowly whisk in dollops of the pumpkin mixture into the egg yolk mixture. Once the yolk mixture feels warm to the touch, pour it back in the pot. 4. Place the pot over medium heat and constantly whisk until the mixture reaches a simmer, about 4 to 5 minutes. Remove from heat when the first bubble surfaces. 5. Strain the mixture through a mesh sieve and cool in the fridge until completely chilled. 6. Churn the pumpkin base using an ice cream machine. Once it reaches soft serve consistency, add the crushed cookies and stir to combine. 7. Freeze the mixture for 6 hours before serving.
